Behind the Scenes

This past weekend we created a 3 tier cake for a birthday party. Here are some photos we took during the making of the cake.

The first picture was taken after I applied the first crumb coat (a thin layer of buttercream that is applied to trap the crumbs so that crumbs don't get into the final coat or fondant).

The second picture was taken after I covered the tiers in fondant and stacked them up. There are dowels in the middle and bottom tiers to keep the cake sturdy and to keep the tiers from caving in on themselves.

Here's the finished product after the design elements and fondant ball border were added.

Polo Ralph Lauren Cake

I delivered this yellow and blue Ralph Lauren inspired cake Saturday evening for a joint birthday party in the Bronx. The middle tier is decorated with the Ralph Lauren symbol for the fashion loving birthday boy and girl. The cake flavors were poundcake and yellow cake with pineapple filling.

Bread Cheese

One of my favorite desserts is a delicious cheese platter. This past weekend I was in Pennsylvania and at a local market I found this package of cheese labeled "Bread Cheese." I had never heard of it but was so intrigued by the name that I had to try it.

The cheese expert suggested I bake it in the oven and then pour some honey over it. A great combination of sweet and salty!

Summer Cake

This is a cake we did last summer for a wedding in Brooklyn. The two tier cake is iced with yellow buttercream and decorated with fresh, orange gerbera daisies. The cake is rich chocolate with vanilla buttercream.

While fondant gives cakes a clean, polished canvas for decorating, buttercream is another great icing because it is so versatile. Like fondant, it can be colored to match your theme and it can be applied in a variety of ways. This cake is iced with a textured pattern, but you can also apply it to look smooth.

Buttercream cakes can be decorated with buttercream or fondant decorations. Buttercream's soft look and delicious taste are another advantage to forgoing fondant. Although choosing fondant doesn't mean you have to forfeit taste; fondant covered cakes are iced and filled with buttercream underneath.

Just Married Cake

I delivered this cake to a restaurant in Manhattan last night for a wedding reception. The bottom tier is decorated with a two seater bicycle complete with a basket of flowers and tin cans blowing in the breeze. The top tier says it all!

The cake was our most popular flavor, red velvet with cream cheese frosting.

Congratulations John and Jamie!

Golf Birthday Cake

I just finished this latest birthday cake for a very sexy golf enthusiast - my husband! The two tiered cake is decorated with polka dots and an argyle pattern. I made the pin, ball, bag, clubs and score card out of sugar.

The top tier is celebration cake (white cake with sprinkles baked inside) with vanilla pudding filling. The bottom tier is red velvet cake with cream cheese frosting.

Happy birthday Josh!
